The main levels are divided into four categories based on the internal temperature at the center of the piece: rare/blue (46 to 52°C), rare (52 to 55°C), medium (55 to 60°C), and well done (+65°C). Mastering this technique is essential, especially when barbecuing or grilling, where direct heat from charcoal or firewood enhances the qualities of each cut.
Key Doneness Levels and Internal Temperatures
To achieve the exact result, nothing beats using a meat thermometer at the center of the cut. Here are the characteristics of each level:
- Blue or Bleu (46 to 52°C / 115 to 125°F): The meat is seared very quickly over high heat on the outside, leaving the interior practically raw and cool. Smooth, gelatinous texture with a deep red color.
- Rare (52 to 55°C / 125 to 130°F): Seared and crispy exterior, bright red and warm interior (75% of the piece is red). This is the ideal level to appreciate the original juiciness of lean meats.
- Medium (55 to 60°C / 130 to 140°F): The center shows a juicy pink shade covered by a well-browned outer layer. The muscle structure begins to firm up, concentrating the juices in the center of the meat.
- Medium Well (60 to 65°C / 140 to 150°F): A very light pink tone in the center with brown edges. The meat loses some of its juiciness but gains firmness.
- Well Done (+65°C / +150°F): A grayish or brown tone throughout the cut. Juices have largely evaporated, and the muscle fibers contract completely.
The Perfect Doneness According to the Premium Meat Cut
Not all beef or Iberian pork cuts react the same way to heat. The amount of marbled fat and the thickness of the cut determine its ideal level of doneness on the barbecue.
- The Beef Ribeye Steak (Chuletón)
- Recommended Doneness: Rare to Medium-Rare (52 – 54°C).
- Why: As a thick cut with high fat marbling, a strong sear over hot coals caramelizes the exterior (Maillard reaction) while melting the intramuscular fat, resulting in extremely buttery, flavorful meat.
- The Tenderloin / Filet Mignon (Solomillo)
- Recommended Doneness: Rare (52 – 55°C).
- Why: Tenderloin is the softest cut of the animal, but also one of the leanest (with very little fat). If overcooked, it dries out extremely easily. It needs minimal time on the barbecue to retain its natural moisture.
- The Tomahawk
- Recommended Doneness: Medium (55 – 57°C).
- Why: This impressive bone-in ribeye requires a mixed grilling technique: intense direct searing on both sides followed by gentle indirect heat. Having significant fat coverage, bringing it to “medium” allows the fat to render and infuse all the meat fibers.
- The Entrecôte / Strip Loin / Rib Loin (Lomo Alto/Bajo)
- Recommended Doneness: Medium (55 – 58°C).
- Why: It features a fantastic balance between muscle fiber and fat marbling. Barbecued to this level, it achieves a firm texture on the outside and a supremely juicy bite on the inside.
Tips for Nailing Barbecue Meat
To turn a great ingredient into a memorable dish over the coals, keep these golden rules in mind:
- Bring the meat to room temperature: Take the meat out of the refrigerator at least 1 to 2 hours before grilling so the center isn’t ice-cold.
- High heat and no open flame: Cook over mature coals (white/grayish) without direct flames to avoid burning the outer fat.
- Mandatory resting time: Let the piece rest on a warm board for 3 to 5 minutes before carving or slicing. This allows the juices to redistribute from the center to the edges rather than spilling out on the board.
- Flake salt at the end: Add coarse or flake salt right after taking the meat off the grill so as not to dehydrate it during cooking.
