The perfect pairing: charcoal-grilled Chateaubriand and Carroleon Red

In fine dining, finding the exact harmony between an exceptional cut of meat and a wine with personality is a true art form. We present the latest addition to the Chef’s Suggestions at Restaurante Tipi Tapa, in Fuengirola: our grilled beef Chateaubriand, designed to be enjoyed in good company and paired with the elegance of Carroleón Tinto (100% Prieto Picudo).

Grilled Beef Chateaubriand

The secret to this dish lies in the raw ingredients and the precision of the flame. Made exclusively from the heart of the beef tenderloin, we select each piece for its extraordinary tenderness and juiciness.

The Magic of the Charcoal Grill

We cook the cut over open flames to maximize its natural flavor. This method allows us to achieve:

  • A delicately seared exterior: Creating a crispy crust that seals in all the juices.
  • A juicy interior: Preserving the perfect cooking point of the meat, tender and melt-in-your-mouth with every bite.

A noble and generous cut where the aroma of the grill and the quality of the beef are the true stars.

The Ideal Pairing: Carroleón Tinto (D.O. León)

To complement the boldness of the grill, we have selected Carroleón Tinto, a wine full of character from Pago Carroleón. Crafted 100% from the Prieto Picudo grape variety using organic viticulture and hand-harvested grapes, this red wine undergoes 24 months of aging in French oak barrels, aged in a subterranean cellar over 300 years old.

Tasting Notes and Culinary Harmony

When poured into the glass, it reveals an intense cherry-garnet color with purple hues. On the nose, ripe fruit notes stand out, combined with the spicy and toasted nuances granted by its time in the barrel.

Why does it pair perfectly with the Chateaubriand? Its finish on the palate is long, complex, and structured. The bitter notes of its tannins blend seamlessly with the juiciness of the beef, while its smoothness and balance cleanse the palate with every sip, preparing your senses for the next bite.
