Huevo de Toro Tomato Gastronomic Trail 2026
Summer on the Costa del Sol is not only synonymous with sun, beach, and relaxation, but also with the peak season of Malaga’s rich countryside. During the summer weeks, one product becomes the undisputed star of the kitchen: the Huevo de Toro Tomato (Bull’s Testicle Tomato) from the Guadalhorce Valley.
At Tipi Tapa Restaurant, located right in the heart of Fuengirola, we are proud to join the Huevo de Toro Tomato Gastronomic Route once again. From July 31st to August 31st, we open our doors to this key culinary event in the province of Malaga, offering our guests the authentic flavor of freshly harvested tomatoes.
What is the Huevo de Toro Tomato?
To understand the scale of this culinary event, it is essential to highlight the excellence of its star ingredient. The Huevo de Toro Tomato (a local heirloom Oxheart variety) is a traditional crop from the Guadalhorce Valley. Unlike commercial varieties, this tomato is grown outdoors, respecting natural ripening times under the summer sun and nourished by the region’s rich water sources.
What makes it so special on the plate?
- Texture & Appearance: It is a large, meaty-hearted tomato with extremely thin skin, requiring delicate hand-harvesting.
- Unmistakable Flavor: It features a perfect balance between sweetness and a subtle acidity, preserving the deep aroma and freshness of traditional tomatoes.
- Guaranteed Quality: The Sabor a Málaga promotional brand and the Guadalhorce Valley Producers Association guarantee the authenticity and excellence of this local produce.
Gastronomic Route Participants
This year, the Huevo de Toro Tomato Gastronomic Route brings together nearly 50 establishments across 19 municipalities in Malaga. It is a vibrant network where chefs and restaurateurs join forces to promote local produce and offer diners fresh, healthy summer dishes.
Throughout August, the province celebrates this harvest with iconic events like the traditional Best Tomato Tasting Contest and Auction in Coín, while restaurants like Tipi Tapa bring the harvest straight to the table on the coast.

Tipi Tapa’s Culinary Offerings
At Tipi Tapa Restaurant in Fuengirola, we are deeply committed to top-quality ingredients. Incorporating the Huevo de Toro tomato into our summer menu allows us to pay tribute to authentic Mediterranean cuisine, enhancing every recipe with handpicked ingredients.
For this edition of the route, our kitchen team has crafted dishes where the tender flesh and juiciness of this tomato take center stage:
1. Huevo de Toro Tomato Gazpacho
An essential classic of Andalusian gastronomy elevated to its finest expression. The delicacy of this tomato yields a smooth, balanced, and silky gazpacho—the ideal starter to beat Fuengirola’s August heat.
2. Salmorejo with Tuna Belly (Ventresca)
For lovers of creamier textures, we prepare a thick, rich, and flavorful salmorejo made with artisan bread, extra virgin olive oil, and the intense pulp of the Huevo de Toro tomato. We top it off with premium tuna belly for a savory, velvety contrast.
3. Seasoned Local Tomato & Salads
Sometimes, simplicity is the pinnacle of gastronomy. We serve the tomato cut into thick slices or fleshy wedges, lightly dressed with sea salt flakes, a generous drizzle of EVOO, and exquisite toppings like tuna belly or fresh microgreens. A crisp, unpretentious dish bursting with flavor in every bite.
